Salt Fat Acid Heat (Samin Nosrat)

The four-element framework for cooking judgment โ€” the theory layer under every recipe here.

Samin Nosrat's book (and Netflix series) teaching cooking as four master variables โ€” salt (when and how much), fat (as medium and flavor), acid (balance), heat (gentle vs. fierce, and when) โ€” rather than as recipe-following. It's the mental model that makes the recipe collection's "why it works" sections generalize: once the framework is internalized, every braise and pan sauce is the same few decisions.

Reach for it to level up from executing recipes to diagnosing them ("this needs acid," "the pan was too cold").

Backs: the technique reasoning across all recipe concepts; most directly roast chicken (salting ahead) and the braises (beef bourguignon, coq au vin), plus sourdough focaccia (oil).
